Jerusalem Artichokes

The large stems of my Jerusalem Artichokes have died back completely, a sure sign of the tubers beneath the soil being ready to dig up. make sure that you dig up as many as you possibly can as they will grow back from any that are left and have the potential to become quite a nuisance.

I love them baked in much the same way as you would a potato, or otherwise boil them and mach them into potatoes with cream and salt and pepper...yum!
